SMOKED SALMON SALAD WITH SUNNY SIDE EGGS, AVOCADO & SPINACH

This smoked salmon salad is fresh, satisfying and packed with goodness. Silky VÅRLAKS smoked salmon, creamy avocado, warm sunny side eggs and tender spinach come together for a balanced meal full of flavor and texture.
A simple smoked salmon salad recipe, perfect for breakfast, brunch, lunch or a light dinner.
Ingredients: (serves: 2)
150 g VÅRLAKS smoked salmon
4 eggs
1 avocado
150 g fresh spinach
1 tbsp olive oil
1 clove garlic (minced)
1 lime or lemon
Handful of sprouts or microgreens
Fresh dill (optional)
Salt & black pepper
Chili flakes (optional)
Steps:
- Prepare the spinach
Heat half of the olive oil in a pan over medium heat.
Add garlic and cook briefly.
Add the spinach and cook for 1–2 minutes until just wilted. Season lightly with salt and pepper. - Cook the eggs
Heat the remaining olive oil in a frying pan.
Crack in the eggs and cook sunny side up until the whites are set and the yolks remain soft. - Prepare the avocado
Slice the avocado and drizzle with a little lime or lemon juice. - Assemble the salad
Divide the warm spinach over bowls or plates.
Add smoked salmon, avocado and the eggs. - Finish
Top with sprouts, fresh dill, black pepper and optional chili flakes. Serve with lime wedges.
