SMOKED SALMON RICE SALAD WITH AVOCADO & GREENS

This smoked salmon rice salad is a fresh and nourishing meal, combining silky VÅRLAKS smoked salmon with fluffy white rice, creamy avocado and crisp green vegetables. Light, balanced and easy to prepare, it is perfect for lunch, dinner or meal prep.
A simple smoked salmon bowl recipe packed with flavor and goodness.
Ingredients: (serves: 2)
150 g VÅRLAKS smoked salmon
150 g white rice (uncooked)
1 avocado
100 g spinach, lamb’s lettuce or mixed greens
½ red onion (thinly sliced)
Fresh dill
1 tbsp olive oil
Juice of ½ lemon
1 tsp honey or brown sugar
Juice of 1 lime
Salt & black pepper
Optional: sesame seeds or chili flakes
Steps:
- Cook the rice
Cook the white rice according to the package instructions. Let it cool slightly or serve warm. - Prepare the vegetables
Slice the avocado and red onion. Wash the greens if needed. - Make the dressing
Mix olive oil, lemon juice, salt and pepper in a small bowl. - Assemble the bowl
Divide the rice over bowls.
Add greens, smoked salmon, avocado and red onion.. - Finish
Drizzle with the dressing and top with fresh dill. Add optional sesame seeds or chili flakes.
