SMOKED SALMON BOWL WITH EGG, AVOCADO & VEGETABLES

This keto smoked salmon bowl is a simple, nutrient-rich meal with healthy fats, protein and fresh vegetables. Silky VÅRLAKS smoked salmon, creamy avocado and a sunny side egg are served with warm sautéed vegetables for a balanced low-carb dish.

Perfect for breakfast, lunch or a light dinner when you want something filling without the carbs.

Ingredients (serves: 2):

  • 150 g VÅRLAKS smoked salmon

  • 2 eggs

  • 1 avocado

  • 150 g mushrooms (sliced)

  • 1 small zucchini (diced)

  • ½ red bell pepper (diced)

  • ½ red onion (thinly sliced)

  • 2 handfuls lettuce or mixed greens

  • 1 tbsp olive oil or butter

  • Juice of ½ lemon

  • Salt & black pepper

  • Optional: sesame seeds, chili flakes, fresh mint or dill

Steps:

  • Cook the vegetables
    Heat olive oil or butter in a frying pan over medium heat.
    Add mushrooms, zucchini, bell pepper and red onion.
    Cook for 6–8 minutes until softened and lightly golden. Season with salt and pepper.
  • Fry the eggs
    In a separate pan, fry the eggs sunny side up until the whites are set and the yolks remain soft.
  • Prepare the avocado
    Slice the avocado and drizzle lightly with lemon juice.
  • Assemble the bowl
    Divide the warm vegetables between bowls or plates.
    Add lettuce, smoked salmon and avocado.
  • Finish
    Place the fried egg on top. Add black pepper and optional sesame seeds or herbs.
