SALMON WITH CREAMY MUSHROOM SAUCE & SALAD

This salmon with creamy mushroom sauce is a warm, satisfying dish with deep, savory flavors. The rich sauce pairs perfectly with the tender VÅRLAKS salmon, while a fresh green salad adds balance and lightness.

Ingredients: (serves: 2)
2 VÅRLAKS salmon fillets
2 tbsp olive oil
Salt & black pepper
200 g mushrooms (sliced)
1 small shallot (finely chopped)
1 clove garlic (minced)
100 ml cooking cream
1 tsp Dijon mustard
1 tbsp butter
Fresh parsley (finely chopped)
Mixed lettuce
1 tsp lemon juice or vinegar
Steps:
- Prepare the salad
In a bowl, mix the lettuce with olive oil, lemon juice, salt and pepper. Set aside. - Cook the salmon
Season the salmon with salt and pepper.
Heat olive oil in a pan over medium heat and cook the salmon for 4–5 minutes per side until golden and just cooked through. Remove from the pan and keep warm. - Make the mushroom sauce
In the same pan, melt the butter. Add mushrooms and cook until golden brown.
Add the shallot and cook for 2–3 minutes until soft, then add garlic briefly.
Deglaze with white wine (if using) and let it reduce.
Add the cream and Dijon mustard. Let the sauce simmer for a few minutes until slightly thickened. Season with salt and pepper. - Finish the dish
Place the salmon on plates and spoon the creamy mushroom sauce over it.
Sprinkle with fresh parsley. - Serve
Serve with the fresh salad on the side.
