SALMON SHAKSHUKA WITH FRIED EGGS

A fresh twist on a classic shakshuka: warm, colorful and full of flavor.

This salmon shakshuka combines rich tomato vegetables, soft fried eggs and tender VÅRLAKS salmon in one comforting pan. Sweet peppers, onions and herbs bring freshness, while the salmon adds a delicious, premium twist.

A simple one-pan salmon recipe that works perfectly for brunch, lunch or an easy dinner.

Ingredients (serves: 2-3):

  • 2 VÅRLAKS salmon fillets

  • 4 eggs

  • 1 tbsp olive oil

  • 1 onion (sliced)

  • 1 red bell pepper (sliced)

  • 2 cloves garlic (minced)

  • 400 g chopped tomatoes (canned or fresh)

  • 1 tbsp tomato paste

  • 1 tsp paprika powder

  • ½ tsp cumin

  • ½ tsp chili flakes (optional)

  • 2 spring onions (sliced)

  • Fresh parsley or dill (chopped)

  • Salt & black pepper

Steps:

  • Cook the vegetables
    Heat olive oil in a large frying pan over medium heat.
    Add onion and bell pepper, and cook for 5 minutes until soft.
    Add garlic and cook briefly.
  • Build the sauce
    Stir in chopped tomatoes, tomato paste, paprika, cumin and chili flakes.
    Season with salt and pepper.
    Let the sauce simmer for 10 minutes until slightly thickened.
  • Add the salmon
    Cut the salmon into chunks and gently place into the sauce.
    Let it cook for 4–5 minutes.
  • Add the eggs
    Make four small wells in the sauce and crack the eggs into them.
    Cover the pan with a lid and cook for 5–7 minutes until the eggs are set to your liking.
  • Finish
    Sprinkle with spring onion and fresh herbs before serving.
