PAPPARDELLE WITH SALMON & BASIL PESTO

This pappardelle with salmon and basil pesto is a light yet flavorful dish, combining tender VÅRLAKS salmon with fresh green pesto and soft ribbons of pasta. The citrus notes and herbs bring balance, making it perfect for both a quick dinner and a more refined meal.

Ingredients: (serves: 2)

  • 200 g pappardelle

  • 2 VÅRLAKS salmon fillets

  • 2 tbsp olive oil

  • 2–3 tbsp basil pesto

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • Fresh basil or dill (optional)

  • Salt & black pepper

  • Optional: grated Parmesan cheese

Steps:

  • Cook the pasta
    Cook the pappardelle in salted boiling water according to the package instructions. Reserve a small cup of pasta water, then drain.
  • Cook the salmon
    Season the salmon with salt and pepper.
    Heat olive oil in a pan over medium heat and cook for 4–5 minutes on the skin side until crispy.
    Flip and cook for another 2–3 minutes until just done. Remove from the pan and gently break into large pieces.
  • Combine
    Add the cooked pasta back into the pan with a splash of pasta water.
    Stir in the pesto, lemon juice and lemon zest.
  • Finish
    Gently fold in the salmon and mix carefully to keep the pieces intact.
  • Serve
    Divide over plates and finish with fresh herbs and optional Parmesan.
