OVEN-BAKED SALMON WITH LEMON, ASPARAGUS & CRISPY POTATOES

This oven-baked salmon with lemon is a clean, simple recipe with maximum flavor. The VÅRLAKS salmon is gently roasted with fresh herbs and citrus, served alongside crispy potatoes and tender asparagus.

Ingredients: (servres: 2)
2 VÅRLAKS salmon fillets
300 g baby potatoes (halved)
1 bunch green asparagus (trimmed)
1 lemon (sliced)
2 tbsp olive oil
2 cloves garlic (whole or halved)
1 tsp dried herbs (thyme or Italian mix)
Fresh parsley (finely chopped)
Salt & black pepper
Steps:
- Preheat the oven
Preheat the oven to 200°C (180°C fan). - Roast the potatoes
Place the baby potatoes in a baking dish.
Drizzle with half of the olive oil, add garlic, salt, pepper and dried herbs. Roast for 20–25 minutes until golden and crispy. - Add the salmon and asparagus
Remove the dish from the oven and add the asparagus and salmon fillets.
Drizzle with the remaining olive oil and season with salt and pepper.
Place lemon slices on top of the salmon. - Bake
Return to the oven and bake for another 12–15 minutes, until the salmon is just cooked and the asparagus is tender. - Finish
Sprinkle with fresh parsley before serving.
