Mini Quiches with Salmon

These savory mini quiches with VÅRLAKS salmon and zucchini are perfect for brunch, lunch or delicious snack. Easy to prepare and packed with flavor, they’re sure to be a crowd favorite!

Ingredients:

  • 1 VÅRLAKS salmon fillet

  • 1 small zucchini (sliced thinly)

  • 1/2 cup grated cheese (e.g., cheddar or Gruyère)

  • 4 eggs

  • 1/2 cup heavy cream

  • Salt and pepper, to taste

  • 1 tablespoon olive oil

  • 1 sheet of ready-made puff pastry

  • Optional: fresh herbs (e.g., parsley, chives) for garnish

Steps:

  • Prep the Ingredients:
    Preheat your oven to 180°C (350°F). Slice the zucchini thinly, and cube the VÅRLAKS salmon. Set aside.
  • Cook the Zucchini:
    Heat olive oil in a pan over medium heat. Cook the zucchini slices for 3-4 minutes until tender. Set aside to cool slightly.
  • Prepare the Quiche Filling:
    In a bowl, whisk together the eggs and cream. Season with salt and pepper. Stir in the cooked zucchini, salmon cubes, and cheese.
  • Shape the Pastry:
    Roll out the puff pastry and cut it into circles large enough to fit into a muffin tin. Gently press the pastry into each muffin cup, trimming any excess pastry from the edges.
  • Fill and Bake:
    Pour the egg mixture into each pastry-lined muffin cup, filling about 3/4 of the way. Place in the oven and bake for 20-25 minutes or until the quiches are golden and set.
  • Garnish and Serve:
    Let the mini quiches cool slightly before removing them from the muffin tin. Garnish with fresh herbs and serve warm!
