MACCHERONI AL FERRETTO WITH SMOKED SALMON, PEAS & SUN-DRIED TOMATOES

Ingredients: (serve: 2)

  • 200 g maccheroni al ferretto

  • 150 g VÅRLAKS smoked salmon (sliced or torn into pieces)

  • 1 tbsp olive oil

  • 1 small shallot (finely chopped)

  • 1 clove garlic (minced)

  • 80 g peas

  • 60 g sun-dried tomatoes (chopped)

  • 100 ml cooking cream or crème fraîche

  • 30 g Parmesan cheese (grated)

  • Salt & black pepper

  • Optional: chili flakes or fresh herbs

Steps:

  • Cook the pasta
    Cook the maccheroni al ferretto in salted boiling water according to the package instructions. Reserve a small cup of pasta water, then drain.
  • Prepare the base
    Heat olive oil in a pan over medium heat.
    Cook the shallot for 2–3 minutes until soft, then add garlic briefly.
  • Build the sauce
    Add peas and sun-dried tomatoes and cook for 2 minutes.
    Stir in the cream and let it warm gently.
  • Combine
    Add the cooked pasta to the pan with a splash of pasta water if needed. Stir in Parmesan cheese.
  • Add the smoked salmon
    Remove the pan from direct heat and gently fold in the smoked salmon. This keeps the salmon soft and delicate.
  • Serve
    Divide over plates and finish with black pepper, herbs or chili flakes if desired.
