MACCHERONI AL FERRETTO WITH SMOKED SALMON, PEAS & SUN-DRIED TOMATOES

Ingredients: (serve: 2)
200 g maccheroni al ferretto
150 g VÅRLAKS smoked salmon (sliced or torn into pieces)
1 tbsp olive oil
1 small shallot (finely chopped)
1 clove garlic (minced)
80 g peas
60 g sun-dried tomatoes (chopped)
100 ml cooking cream or crème fraîche
30 g Parmesan cheese (grated)
Salt & black pepper
Optional: chili flakes or fresh herbs
Steps:
- Cook the pasta
Cook the maccheroni al ferretto in salted boiling water according to the package instructions. Reserve a small cup of pasta water, then drain. - Prepare the base
Heat olive oil in a pan over medium heat.
Cook the shallot for 2–3 minutes until soft, then add garlic briefly. - Build the sauce
Add peas and sun-dried tomatoes and cook for 2 minutes.
Stir in the cream and let it warm gently. - Combine
Add the cooked pasta to the pan with a splash of pasta water if needed. Stir in Parmesan cheese. - Add the smoked salmon
Remove the pan from direct heat and gently fold in the smoked salmon. This keeps the salmon soft and delicate. - Serve
Divide over plates and finish with black pepper, herbs or chili flakes if desired.
