GRILLED SALMON WITH TERIYAKI GLAZE & ASPARAGUS

This grilled salmon with teriyaki glaze is a perfect balance of sweet, savory and fresh. The VÅRLAKS salmon is lightly charred and coated in a rich glaze, served with tender green asparagus and a side of rice.

Ingredients: (serves: 2)

  • 2 VÅRLAKS salmon fillets

  • 1 tbsp sesame oil or neutral oil)

  • 1 bunch green asparagus (trimmed)

  • 150 g white rice (uncooked)

  • 1 lime (sliced)

  • 1 tbsp sesame seeds

  • Salt & black pepper

  • 2 tbsp soy sauce

  • 1 tbsp honey or brown sugar

  • 1 tsp grated ginger

  • 1 clove garlic (minced)

  • 1 tbsp mirin (optional)

Steps:

  • Cook the rice
    Cook the rice according to the package instructions. Keep warm.
  • Prepare the teriyaki glaze
    Mix soy sauce, honey, ginger, garlic and mirin in a small bowl.
  • Grill the salmon
    Season the salmon lightly with salt and pepper.
    Heat oil in a grill pan or frying pan over medium-high heat.
    Grill the salmon for 4–5 minutes on the skin side until nicely marked and crispy.
    Flip and cook for another 2–3 minutes.
  • Add the glaze
    Pour the teriyaki glaze into the pan and let it coat the salmon for about 1 minute until slightly sticky.
  • Cook the asparagus
    In a separate pan, cook the asparagus for 4–5 minutes until tender but still crisp.
  • Serve
    Place the salmon on a plate with the asparagus and serve with rice.
    Finish with lime slices and sesame seeds.
