Ingredients (serves 2):

  • 2 VÅRLAKS salmon fillets

  • 1 tbsp soy sauce (light or low sodium)

  • 1 tbsp olive oil

  • 1 tbsp honey (or maple syrup)

  • Juice of ½ lemon

  • 2 cloves garlic, mincedl

  • ½ tsp of oregano

  • ½ tsp dried or fresh thyme

  • ½ tsp dried or fresh basil

  • Salt & pepper to taste

  • Broccoli, cauliflower & carrots (steamed or lightly sautéed)
    Optional: lemon slices for garnish

Steps:

  • Preheat the oven to 180°C / 355°F (fan).
  • Make the glaze.
In a small bowl, mix soy sauce, olive oil, honey, lemon juice, garlic and herbs.
  • Prep the tray.
Cut the vegetables into small, even pieces so they roast evenly. Place them in a baking dish or tray lined with baking paper, drizzle with a bit of oil and season lightly.
  • Pe-roast the veggies.
Bake the vegetables on their own for 5 minutes first for a softer result — or skip this step if you like them with a bit of bite.
  • Add the salmon.
Place the salmon fillets in the tray, among the veggies. Spoon the glaze over both the salmon and vegetables.
  • Bake.
Return to the oven and bake everything together for 12–14 minutes, depending on the thickness of the fillets. Add lemon slices in the last 5 minutes, if desired.

One tray. Zero hassle. Just real food with real flavour — done in under 20 minutes.
