FRIED SALMON WITH FRIES & VEGETABLE SALAD

Ingredients: (serves: 2)

  • 2 VÅRLAKS salmon steaks or fillets

  • 400 g fries (fresh or frozen)

  • 1 tbsp olive oil

  • 1 lemon

  • Fresh parsley or dill

  • 1 carrot (grated)

  • ½ zucchini (finely chopped or grated)

  • ¼ cucumber (diced)

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Salt & pepper

Steps:

  • Prepare the fries
    Cook the fries in the oven or air fryer according to the package instructions until golden and crispy.
  • Make the salad
    Mix the carrot, zucchini and cucumber in a bowl.
    Add olive oil, lemon juice, salt and pepper. Set aside.
  • Cook the salmon
    Season the salmon with salt and pepper.
    Heat olive oil in a frying pan over medium heat.
    Cook the salmon for 4–5 minutes per side until golden brown and just cooked through.
  • Finish
    Squeeze fresh lemon over the salmon and sprinkle with parsley or dill.
  • Serve
    Plate the salmon with fries and the fresh vegetable salad.
