FRIED SALMON WITH FRIES & VEGETABLE SALAD

Ingredients: (serves: 2)
2 VÅRLAKS salmon steaks or fillets
400 g fries (fresh or frozen)
1 tbsp olive oil
1 lemon
Fresh parsley or dill
1 carrot (grated)
½ zucchini (finely chopped or grated)
¼ cucumber (diced)
1 tbsp olive oil
1 tsp lemon juice
Salt & pepper
Steps:
- Prepare the fries
Cook the fries in the oven or air fryer according to the package instructions until golden and crispy. - Make the salad
Mix the carrot, zucchini and cucumber in a bowl.
Add olive oil, lemon juice, salt and pepper. Set aside. - Cook the salmon
Season the salmon with salt and pepper.
Heat olive oil in a frying pan over medium heat.
Cook the salmon for 4–5 minutes per side until golden brown and just cooked through. - Finish
Squeeze fresh lemon over the salmon and sprinkle with parsley or dill. - Serve
Plate the salmon with fries and the fresh vegetable salad.
