SALMON CEVICHE WITH MANGO & AVOCADO
A light and refreshing salmon ceviche: fresh, citrusy and full of flavor.
Ingredients: (serve: 2)
2 VÅRLAKS salmon fillets (sushi-grade)
1 ripe mango (diced)
1 avocado (diced)
½ cucumber (diced)
Juice of 2 limes
1 tbsp olive oil
1 small shallot or red onion (finely chopped)
Fresh coriander (chopped)
1 tsp sesame seeds
Optional: chili flakes or fresh chili
Salt & black pepper
Steps:
- Prepare the salmon
Cut the salmon into small cubes and place in a bowl. - Cure the salmon
Add the lime juice and a pinch of salt.
Let it sit for 10–15 minutes in the fridge until the salmon lightly firms up. - Add the fresh ingredients
Add mango, avocado, cucumber and shallot to the bowl. - Season
Drizzle with olive oil and add coriander, sesame seeds and optional chili. Season with salt and pepper to taste. - Serve
Serve immediately for the freshest flavor.
