SALMON CEVICHE WITH MANGO & AVOCADO

A light and refreshing salmon ceviche: fresh, citrusy and full of flavor.

Ingredients: (serve: 2)

  • 2 VÅRLAKS salmon fillets (sushi-grade)

  • 1 ripe mango (diced)

  • 1 avocado (diced)

  • ½ cucumber (diced)

  • Juice of 2 limes

  • 1 tbsp olive oil

  • 1 small shallot or red onion (finely chopped)

  • Fresh coriander (chopped)

  • 1 tsp sesame seeds

  • Optional: chili flakes or fresh chili

  • Salt & black pepper

Steps:

  • Prepare the salmon
    Cut the salmon into small cubes and place in a bowl.
  • Cure the salmon
    Add the lime juice and a pinch of salt.
    Let it sit for 10–15 minutes in the fridge until the salmon lightly firms up.
  • Add the fresh ingredients
    Add mango, avocado, cucumber and shallot to the bowl.
  • Season
    Drizzle with olive oil and add coriander, sesame seeds and optional chili. Season with salt and pepper to taste.
  • Serve
    Serve immediately for the freshest flavor.
