CREAMY SALMON SOUP WITH POTATOES & HERBS

This creamy salmon soup is rich, warming and easy to make. Tender VÅRLAKS salmon is combined with soft potatoes, sweet carrots and fresh herbs in a smooth, flavorful broth.

Ingredients (serves: 2-3):
2 VÅRLAKS salmon fillets
1 tbsp butter or olive oil
1 small onion (finely chopped)
2 carrots (diced)
300 g potatoes (peeled and diced)
600 ml vegetable or fish stock
150 ml cooking cream
2 tbsp fresh parsley (chopped)
1 spring onion (sliced, optional)
Juice of ½ lemon
Salt & black pepper
Steps:
- Prepare the base
Heat butter or olive oil in a large pot over medium heat.
Add onion and carrots and cook for 4–5 minutes until soft. - Build the soup
Add the potatoes and stock.
Bring to a boil, then simmer for 12–15 minutes until the potatoes are tender. - Add the salmon
Cut the salmon into chunks and gently add to the soup.
Cook for 5–6 minutes until just done. - Finish the soup
Stir in the cream and lemon juice. Season with salt and pepper. - Serve
Ladle into bowls and top with fresh parsley and spring onion.
