CREAMY SALMON SOUP WITH POTATOES & HERBS

A hearty soup with fresh salmon: warm, comforting and full of flavor.

This creamy salmon soup is rich, warming and easy to make. Tender VÅRLAKS salmon is combined with soft potatoes, sweet carrots and fresh herbs in a smooth, flavorful broth.

Ingredients (serves: 2-3):

  • 2 VÅRLAKS salmon fillets

  • 1 tbsp butter or olive oil

  • 1 small onion (finely chopped)

  • 2 carrots (diced)

  • 300 g potatoes (peeled and diced)

  • 600 ml vegetable or fish stock

  • 150 ml cooking cream

  • 2 tbsp fresh parsley (chopped)

  • 1 spring onion (sliced, optional)

  • Juice of ½ lemon

  • Salt & black pepper

Steps:

  • Prepare the base
    Heat butter or olive oil in a large pot over medium heat.
    Add onion and carrots and cook for 4–5 minutes until soft.
  • Build the soup
    Add the potatoes and stock.
    Bring to a boil, then simmer for 12–15 minutes until the potatoes are tender.
  • Add the salmon
    Cut the salmon into chunks and gently add to the soup.
    Cook for 5–6 minutes until just done.
  • Finish the soup
    Stir in the cream and lemon juice. Season with salt and pepper.
  • Serve
    Ladle into bowls and top with fresh parsley and spring onion.
