CREAMY SALMON PASTA WITH SUN-DRIED TOMATOES

This linguine with salmon and sun-dried tomatoes is a rich and satisfying dish with deep, savory notes. The soft VÅRLAKS salmon pairs perfectly with the intense flavor of sun-dried tomatoes, olive oil and Parmesan.

Ingredients (serves: 2):
200 g linguine
2 VÅRLAKS salmon fillets
2 tbsp olive oil
2 cloves garlic (minced)
80 g sun-dried tomatoes (sliced)
1 tbsp lemon juice
30 g Parmesan cheese (grated)
Handful of fresh spinach or basil
Salt & black pepper
Optional: chili flakes
50 ml white wine (optional)
Steps:
- Cook the pasta
Cook the linguine in salted boiling water according to the package instructions. Reserve a small cup of pasta water, then drain. - Cook the salmon
Season the salmon with salt and pepper.
Heat 1 tbsp olive oil in a pan over medium heat and cook the salmon for 4–5 minutes on the skin side until crispy.
Flip and cook for another 2–3 minutes until just done. Remove from the pan and break into chunks. - Build the sauce
In the same pan, add the remaining olive oil and sauté garlic briefly.
Add the sun-dried tomatoes and cook for 1–2 minutes.
Deglaze with white wine (if using) and let it reduce slightly.
Add lemon juice and a splash of pasta water. - Combine
Add the linguine to the pan and toss well.
Stir in Parmesan and fresh spinach or basil. - Finish
Gently fold in the salmon and season with salt, pepper and optional chili flakes.
