CREAMY SALMON & CORN SOUP WITH FRESH HERBS

This creamy salmon and corn soup is rich, smooth and packed with flavor. The tender VÅRLAKS salmon pairs perfectly with sweet corn, soft vegetables and fresh herbs, creating a balanced and satisfying dish.
An easy salmon soup recipe that’s perfect for a nourishing lunch or a light dinner.
Ingredients (serves: 2-3):
2 VÅRLAKS salmon fillets
1 tbsp butter or olive oil
1 small onion (finely chopped)
1 carrot (diced)
1 celery stalk or spring onion (sliced)
500 ml vegetable or fish stock
100 ml cooking cream
100 g potatoes (small cubes)
100 g corn
1 tsp turmeric (optional, for color and warmth)
Fresh parsley (chopped)
Salt & black pepper
Steps:
- Prepare the base
Heat butter or olive oil in a large pot over medium heat.
Add onion, carrot and celery or spring onion. Cook for 4–5 minutes until soft. - Build the soup
Add the potatoes and stock.
Bring to a boil, then let it simmer for 10–12 minutes until the potatoes are tender. - Add the salmon
Cut the salmon into chunks and gently add to the soup.
Let it cook for 5–6 minutes until just done. - Finish the soup
Add cream, corn and turmeric (if using).
Let it simmer for a few more minutes. Season with salt and pepper. - Serve
Ladle into bowls and finish with fresh parsley.
