CREAMY SALMON WITH DILL SAUCE & BABY POTATOES

This creamy salmon with dill sauce is a comforting dish with a fresh, aromatic twist. The tender VÅRLAKS salmon is served in a smooth, herb-rich sauce with soft baby potatoes that soak up all the flavor.

Ingredients: (serves: 2)

  • 2 VÅRLAKS salmon fillets

  • 300 g baby potatoes

  • 1 tbsp butter

  • 1 small shallot (finely chopped)

  • 1 clove garlic (minced)

  • 150 ml cooking cream

  • 50 ml vegetable or fish stock

  • 1 tsp Dijon mustard

  • 2 tbsp fresh dill (finely chopped)

  • 1 tbsp lemon juice

  • Salt & black pepper

Steps:

  • Cook the potatoes
    Boil the baby potatoes in salted water for 12–15 minutes until tender. Drain and set aside.
  • Cook the salmon
    Season the salmon with salt and pepper.
    Heat butter in a pan over medium heat and cook the salmon for 4–5 minutes per side until just cooked. Remove and keep warm.
  • Make the dill sauce
    In the same pan, sauté the shallot for 2–3 minutes until soft. Add garlic briefly.
    Pour in the stock and let it reduce slightly.
    Add the cream and Dijon mustard, and let it simmer until the sauce thickens.
  • Finish
    Stir in dill and lemon juice. Season to taste.
    Return the salmon to the pan and spoon the sauce over it.
  • Serve
    Serve the salmon with the baby potatoes and plenty of creamy dill sauce.
