COCONUT SALMON WITH RICE NOODLES & LIME
A fresh Asian-inspired salmon dish: creamy, fresh and full of flavor.
This coconut salmon with rice noodles is a light yet creamy dish with a perfect balance of flavors. The rich coconut sauce, fresh lime and herbs pair beautifully with tender VÅRLAKS salmon and soft rice noodles.
An easy salmon recipe with an Asian twist, ideal for a quick and flavorful dinner.
Ingredients: (serves: 2)
2 VÅRLAKS salmon fillets
150 g rice noodles
1 tbsp oil (neutral or sesame oil)
1 clove garlic (minced)
1 tsp grated ginger
200 ml coconut milk
1 tbsp soy sauce
1 tbsp fish sauce (optional)
1 tsp honey or brown sugar
Juice of 1 lime
Fresh coriander (chopped)
Chili flakes or fresh chili (optional)
Salt & black pepper
Optional: sesame seeds
Steps:
- Cook the noodles
Prepare the rice noodles according to the package instructions. Drain and set aside. - Cook the salmon
Season the salmon with salt and pepper.
Heat oil in a pan over medium heat and cook the salmon for 4–5 minutes on the skin side until crispy.
Flip and cook for another 2–3 minutes until just done. Remove from the pan. - Make the coconut sauce
In the same pan, add garlic and ginger and cook briefly.
Pour in the coconut milk, soy sauce, fish sauce and honey.
Let it simmer for a few minutes until slightly thickened.
Add lime juice and chili if using. - Combine
Add the rice noodles to the sauce and toss gently. - Serve
Place the noodles in bowls and top with the salmon.
Finish with fresh coriander and optional sesame seeds.
