CIABATTA TOASTS WITH SALTED SALMON, RICOTTA & CUCUMBER

Ingredients: (serves: 2-3)

  • 1 ciabatta loaf

  • 150 g VÅRLAKS salted salmon (thinly sliced)

  • 150 g ricotta cheese

  • ½ cucumber

  • 1 tbsp olive oil

  • 1 tsp lemon juice

  • Fresh dill

  • 1 tsp sesame seeds

  • Salt & black pepper

Steps:

  • Toast the ciabatta
    Slice the ciabatta into pieces.
    Brush lightly with olive oil and toast in the oven, grill pan or toaster until golden and crisp.
  • Prepare the cucumber
    Use a peeler to slice the cucumber into thin ribbons.
    Season lightly with lemon juice and a pinch of black pepper.
  • Build the toasts
    Spread a generous layer of ricotta over each toast.
    Top with slices of salted salmon and cucumber ribbons.
  • Finish
    Sprinkle with sesame seeds and fresh dill.
  • Serve
    Serve immediately while the bread is still crisp.
