CIABATTA TOASTS WITH SALTED SALMON, RICOTTA & CUCUMBER

Ingredients: (serves: 2-3)
1 ciabatta loaf
150 g VÅRLAKS salted salmon (thinly sliced)
150 g ricotta cheese
½ cucumber
1 tbsp olive oil
1 tsp lemon juice
Fresh dill
1 tsp sesame seeds
Salt & black pepper
Steps:
- Toast the ciabatta
Slice the ciabatta into pieces.
Brush lightly with olive oil and toast in the oven, grill pan or toaster until golden and crisp. - Prepare the cucumber
Use a peeler to slice the cucumber into thin ribbons.
Season lightly with lemon juice and a pinch of black pepper. - Build the toasts
Spread a generous layer of ricotta over each toast.
Top with slices of salted salmon and cucumber ribbons. - Finish
Sprinkle with sesame seeds and fresh dill. - Serve
Serve immediately while the bread is still crisp.
