Italian Pasta with Salmon

Ingredients

  • 250 grams of your favourite Italian pasta
  • 2 salmon fillets
  • 1 cup of broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 leek, thinly sliced
  • 1 cup heavy cream
  • 2 tablespoons prepared horseradish (adjust to taste)
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper. Bake in the preheated oven for 10-15 minutes, or until the salmon flakes easily with a fork.
  3. While the salmon is baking, cook the pasta according to the package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets to the boiling water. Drain the pasta and broccoli and set them aside.
  4. In a large skillet, heat olive oil over medium heat. Add the sliced leeks and sauté for about 2-3 minutes until they begin to soften.
  5. Pour in the heavy cream and stir in the prepared horseradish. Allow the mixture to simmer for 2-3 minutes to thicken slightly. Taste and adjust the horseradish, salt and pepper to your liking.
  6. Once the salmon is done baking, remove it from the oven and flake it into bite-sized pieces.
  7. Add the baked salmon pieces and grated with Parmesan cheese to the creamy leek sauce in the skillet. Gently stir to combine.
  8. Finally, add the cooked pasta and broccoli to the skillet with the salmon, sauce and cheese. Toss everything together until the pasta, broccoli, and salmon are well coated with the creamy sauce and cheese.
